How to give the wines with the dishes?

Here are some very general rules but easy to remember:
 
Red meat red wine =
White meat white wine =
Fish and seafood = dry white wine
Poultry and meat = light red or pink
Spicy food = sweet white wines and semi-dry
 
Dairy products are going very badly with the tannins in red wine.
The champagne is perfect as an appetizer or main course ... but not dessert.
 
If, for diplomatic reasons, you feel compelled to put a red wine where it would have rather had put a white wine, choose red instead of the northern half of France and be sure to use pretty cool.
 
The foregoing rules are simplistic, of course ... but they avoid large incompatibilities. It must be emphasized that these rules have many exceptions, but in between there
